COUSCOUS

Mohntorte is one of Austria's most popular cakes and one served across all types of restaurants and cafes, whether it be at a "Heurige" or in a typical viennese coffee house. It is one of our favourite cakes so we hope you love it just as much as we do :)

TOTAL TIME: 3 hours

serves: 10 -12  

INGREDIENTS

METHOD

  • Coucous (up to you how much but I would go with app. 300 g)

  • The appropriate amount of chicken stock (Will say how many ml are required)

  • 1 orange

  • 100 g almonds

  • 50 g pistachio

  • 100 g dates

  • 100 g cranberries

  • 30 g of dried apricots

  • 1/2 pomegranate seeds

  • 5 cardamon seeds

1.     Pour 300 g of couscous into a bowl.

2.     In a pot, bring some water to boil and add some chicken stock. The amount of water will be indicated on what couscous you end up using. Squeeze in some fresh orange juice.

 

3.     Once the stock is prepared pour it over the Couscous and let it soak up the stock.

 

4.     Roast the almonds in a bit of butter and salt. MAke sure you don't burn them.

 

5.     Then get chopping. Start chopping the roasted almonds, chop the pistachios, slice up the pitted dates and chop them. Chop the dried apricots and add all of that including the dried cranberries to the couscous. Mix it all together.

 

6.     Add salt and pepper and you’re done! You can serve it cold or warm.
